Ingredients

* 4 Medium Cucumbers
* 3 Medium Totamtoes
* Handful of mint leaves
* A few lemons
* Olive Oil
* Salt

Directions

Wash the cucumbers and then slice the cucumbers into 1 inch long medium pieces. They don’t need to be diced super small. Put the cucumbers into a bowl.

Slice the tomatoes into small bit size pieces and add them to the bowl.

Wash the mint leaves and then dry them in a paper towel.

Add pieces of the mint to the bowl. The mint pieces can be a single leave or cut each leaf into 2 parts by hand.

Drizzle olive oil on the salad to add texture. Add some salt, which is also important to replenish on hot days.

Finally hand squeeze the lemons onto the salad and mix.

Let it sit 5 minutes and then its ready to serve.
